Posted by nickles at February 9, 2005 05:11 PMOK, ok, so it didn't turn out as I expected. And I got all of us guys in the house banned from ever using Bill's cast iron cookware again.
...but it wasn't bad! I might even say it was decent. Here's the recipe:
Melt a stick of butter in a cast iron skillet with high sides, about 7 inches across the bottom and 10 across the top. Sprinkle a cup of sugar evenly over the bottom of the skillet after the butter has melted. Then, arrange cored apple quarters around the skillet, radiating lengthwise from the center and standing on their thin edges so as to fit as many as possible. This took me about 6 apples, and then I stuffed the extra pieces in the middle. Well, you put this bad boy back on the burner until the juices begin running dark (think caramel). Then use a fork or knife to stab the apples and turn them over. After a few more minutes, toss a pastry crust (flour, butter, sugar, shortening, baking powder and a LITTLE ice water) over it and tuck in in along the edges. Bake at 375 F for 20 minutes or so, then take it out and cool for 20 more minutes. Last step: invert into a tarte dish or pie pan or something. If any apples are out of place, rearrange them and sprinkle with confectioner's sugar. Oh man.
